The process burns the wheat slightly and just enough to bring forth the characteristic aroma and slightly nutty taste. Saroj Agro Chakki Atta is perfect for making Indian flatbreads like Naan, Roti, etc, but the damage that occurs to the starch during grinding is not good for western bread-baking.
